The Furrion Vision S # FOS05TASF you were looking at is the best solution because of the large 7" LCD monitor that it comes with and will hook directly up to the pre-wiring on your 2021 Keystone Campfire Sprinter. The pre-wiring typically connects so that the camera turns on when the reverse light circuit is activated via the 7 way on your vehicle, so there's not any additional wiring needed. If you wanted to change this so that it activates when the running lights are turned on, you'd need to connect the power wire from the pre-wiring to the running light circuit on the trailer's 7 way plug. The toggle switches on your truck won't matter unless you were to change the wiring.
If you weren't concerned with the bigger monitor then you can get the same system with a 4.3" monitor with part # FOS43TASF.
I've linked a review video of this system for you to check out.
