We don't offer a 1-1/4 to 1-1/4 inch rise adapter such as the # RM-077-8 you'd looked at, but we do have a combination of two parts that could possibly provide a solution for you.
I'd recommend using the CR Brophy # HT5R along with the # HT02. The # HT5R is a 1-1/4 to 2 inch adapter with a 5 inch rise. You'd use the # HT02 to reduce the 2 inch receiver on the # HT5R back down to a 1-1/4 inch adapter. You'll need one # PC3 hitch pin to retain the # HT02 in the adapter, and one # PC2 hitch pin to secure the # HT5R to the receiver on your vehicle. Using this setup does have its downside, though. The # HT5R adapter will reduce the tongue weight capacity of your 1-1/4 inch hitch by half, which would be from 200 to 100 lbs, if you're using a Class I receiver. The tongue weight (TW) capacity will be listed on an ID sticker affixed to the hitch. This means that the weight of the hitch accessory like a bike rack or cargo carrier plus whatever is carried upon it cannot exceed half the hitch's listed tongue weight capacity which could prove to be a problem.
A better solution would be to go with a hitch accessory that has an angled shank for improved ground clearance, so you can completely avoid using an adapter. If you were wanting to use your hitch for a bike rack, the Swagman Trailhead # S63360 features a shank with a 3 inch rise for better ground clearance would be an excellent choice. I've linked to a product demonstration video for the bike rack I mentioned.
