For the most concealed trailer hitch available you want the Stealth Hitches Trailer Hitch Receiver w/ Towing Package - Custom Fit - 2" part # 391SUOB20T. This hitch when not in use is completely hidden and offers zero change to the vehicle's looks. It has a removable ball mount and receiver tube opening allowing for this completely hidden look. Since it is custom fit it is a great match for your Subaru Outback. It is a good hitch for recreational use like with bike racks and cargo carriers and is also great for towing. Custom fit wiring is included with this hitch and gives you a fully functional 4 way flat connector for any lighting needs you may have. The only drawback to this hitch is the cost when compared to the others available. If you're only interested in hauling accessories you can opt for Stealth Hitches Rack Receiver - Custom Fit - 2" part # 391SUOB20 but keep in mind this one while similar to the one above is not for towing trailers only for accessories.
For instance the Curt Trailer Hitch Receiver - Custom Fit - Class III - 2" part # C67JR is a much more cost effective hitch option and also offers a nice clean look when installed. The only thing you will see after installation is the receiver tube opening and the safety chain connection points. The installation process for both hitches are identical and both hitches exceed the weight ratings of your Outback.
The Curt does not come with wiring but of course we have a solution for that by using the Curt T-Connector Vehicle Wiring Harness with 4-Pole Flat Trailer Connector part # C56040 This will give you will have the same 4-way flat connector that you will receive with the Stealth hitch. I'll include a couple of pics to show where your rear bumper cover will sit in relation to the hitches. The blue line and below is what you will see when not in use as well as links to the product pages.
