Dan, it is possible to convert your trailer's hydraulic disc brakes to electric over hydraulic brakes easily. The conversion requires an electric over hydraulic actuator, break away kit and a brake controller. An electric over hydraulic system gives you the stopping power of hydraulic with the quick response time of electric brakes.
Since you already have the hydraulic braking assemblies replacing the brakes is not needed. For an electric over hydraulic actuator I recommend HydraStar Electric Over Hydraulic Actuator for Disc Brakes part # HBA16 which is rated for 1,600 psi and is vented to release moisture for boat trailers. You will splice the actuator into your existing hydraulic brake lines.
For the breakaway kit, I recommend the Hopkins Trailer Breakaway Kit part # HM20001 which is designed with a built in charger that refuels the battery while the trailer is connected to the tow vehicle. The breakaway kit will activate the trailer brakes if it happens to disconnect from the truck.
Finally you will need a brake controller that is compatible with electric over hydraulic in the 2019 Ram 3500. For the brake controller I recommend the Redarc Tow-Pro Liberty Trailer Brake Controller part # RED24FR and pigtail part # RED39FR which is designed to be compatible with an electric over hydraulic setup. The brake controller will allow you to control the intensity and aggressiveness of the braking and it takes up way less cab space than the typical brake controller.
