Can the EQ91-00-6120 ball be mounted on the EQ-90-02-1000 hitch head? I noticed that it had a shorter shank length.

Yes, the hitch ball part # EQ91-00-6120 that you referenced will fit the Equal-i-zer weight distribution head part # EQ90-02-1000 that you also referenced. You'll need a thin walled socket like part # ALL643216 to install the ball though due to restricted clearances.
