The Demco Hijacker Autoslide 5th Wheel Trailer Hitch part # DM8550034 when paired with the Demco 5th Wheel Rail Adapter part # DM6194 will be an excellent options for your 2016 Chevrolet Silverado 3500 with a 17,200 lb towing capacity. The truck with be your limiting factory so you shouldn't have any worries about the hitch strength.
In regards to the Demco 5th Wheel Rail Adapter, there are no additional bolts needed to secure this. The adapter is held in place via a locking turn plate which you can see in the attached video.
In regards to height adjustments, there are plenty of options on both the hitch head and pin box so you should be able to set everything up to tow level. The main thing you need to be sure of it that you have 4-6" between the bedsides and loft of your trailer.
