The B&W Tow & Stow 3-Ball Mount # BWTS10047C that you referenced is actually perfect for your application! The drop and rise measurements mentioned are for the max adjustments. Since there are adjustment holes that go all the way to the top of the shank you will be able to achieve the correct 3/4" rise for your application. It might not be able to get an exact 3/4" rise but it will be close enough for you to tow level.
I do recommend adding the Trailer Hitch Receiver Lock # BX8858 to deter theft if you don't already have one. The hitch balls can't be removed when the ball mount is installed in your trailer hitch so you only need 1 lock for your application.
