Can Only Trailer Taillights be Used Through 7-Way Trailer Wiring

The guy at JandDs told me I just need 3-wire, Even for a 7 - way plug How does this work?

Most likely what's going on is you need a 7-way trailer wiring connector but you only need the taillight functions which would be the 3 wires....stop/turn left, stop/turn right, and running light.
You can do this with a 7-way by just wiring up the circuits needed and leaving off the others. It's not required that every circuit be wired up on a 7-way if they aren't all going to be used.
