You are on the right track to adding a 7-way to your 2018 Jeep Grand Cherokee without the tow package, and the T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # 118727 will fit your Jeep and is the correct first step.
After adding that, if you only need the functions of the 4-flat (turn signals and tail lights) you can simply add the Adapter 4-Pole to 7-Pole # 37185 and tie off the additional wires which would not be needed.
If you are looking to use a brake controller for your trailers you would need the Universal Installation Kit for Trailer Brake Controller # ETBC7, which will give you a 7-way connector, circuit breakers and the rest of the hardware needed to install a brake controller.
If you also need a brake controller I highly recommend the Redarc Tow-Pro Elite Trailer Brake Controller # RED44FR because it is both highly effective, giving you smooth, controlled braking, and keeps a bulky unit out of the cab of your '18 Grand Cherokee.
The Redarc uses a small control knob you can mount wherever is convenient, and there is even a Universal Mounting Panel for Control Knob # 331-TPSI-001 you can use. The knob not only keeps the main unit out of sight, but also makes the controller very easy to use. The Tow Pro brake controller is proportional, meaning it responds to your Jeep's deceleration for responsive braking, which is why your braking action will be so smooth.
I have added a link to a video of the 4-flat being installed in a 2018 Jeep Grand Cherokee for you, as well as a link to a video of the Red Arc Tow-Pro Elite being installed in a Grand Cherokee for you to take a look at.
