Comparing the Trailer Wiring Harnesses for a 2019 Honda Odyssey

The Curt harness doesnt seem to need to be connected to battery. Is this important or superior if the harness is only used a couple times a year to borrow a relatives trailer for mulch, etc. ? Also what is the difference between the two Tekonsha wiring harnesses available for the odyssey?

There are currently three trailer wiring harnesses available for your 2019 Honda Odyssey; the Curt T-Connector Vehicle Wiring Harness part # C56382, the T-One Vehicle Wiring Harness with Upgraded part # 118781, and the T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector part # 118753.
The fist two are non-powered harnesses which means you do not have to run a power wire up to the battery. The only down side of this is that this will limit the amount of lights you can power but with such a small trailer used for mulch, I don't perceive this to be an issue for you. If you were towing a larger travel trailer with several marker/clearance lights then you would want to go with the latter harness which requires you to route a power wire to the battery.
In regards to comparing the two non-powered Tekonsha and Curt options, they are basically just different manufactures version of the same product. However, we tend to see the least amount of issues with Tekonsha therefore, I recommend the T-One Vehicle Wiring Harness with Upgraded part # 118781.
