I took a look at the owner's manual for a 2016 GMC Canyon and there was no mention of a limit to the speed you can flat tow the vehicle so you will be fine simply following the rules of the road. There are a number of parts needed in order to flat tow your '16 Canyon, which I'll list for you:

Base plates are vehicle-specific and the Demco Classic are a fit for your 2016 Canyon just make sure you do not have adaptive cruise control; these base plates give your car a clean look.
