I want to tow a pop up camper with my 2018 Ford Escape, what all do I need? I know I need a hitch and some other things.

First thing you need to tow a trailer with your 2018 Ford Escape will be a trailer hitch which for that I recommend the Class III, custom fit etrailer.com Hitch part # E98866 because it's a 2 inch hitch with plenty of towing capacity, is made in the USA, and only has the hitch opening visible so it would be mainly out of sight. I attached an install video and picture for you to check out as well.
For trailer wiring I then recommend the T-Connector kit part # C56320 because it requires no splicing to your vehicle to install and has the most reliable converter box of all of the kits we offer. I attached an install video for this for you to check out too.
Since you wanted to do some towing, and you'll also need a ball mount and hitch balls, you might be interested in etrailer ball mount kit # 989900. It comes with 2 ball mounts; one with a 3/4 inch rise or 2 inch drop and one with a 2-3/4 inch rise or 4 inch drop. It also includes a 1-7/8 inch ball, 2 inch ball, hitch pin with clip, and a storage bag.
If the ball mount kit does not include a ball mount with the right rise or drop to tow the trailer level, check out the link I have included that explains how to measure to choose a ball mount to tow the trailer level.
