I have a 2019 Hyundai Santa Fe that I need hitch for to carry a bike rack, what should I get?

For your 2019 Hyundai Santa Fe the trailer hitch I recommend is the Curt hitch part # C13195 because it has a 2 inch opening which most bike racks are made for, the hitch is made in the USA, and it's easy to install.
For a bike rack I really like the Saris SuperClamp EX part # SA4025F.
This is a platform bike rack that only touches the bike at the tires and only weighs 35 lbs. The biggest drawback to platform bike racks has always been the weight of them, but with this rack you get the best of both worlds. The preferred attachment style with the lighter weight.
