The best option to add a wiring harness to your 2019 Chevy Silverado 3500 to tow your fifth wheel trailer is the Bargman # 50-97-410 5th Wheel/Gooseneck 90-Degree Wiring Harness.

This harness, which does require your Silverado have a factory 7-way, is the best way to go because it is 9' long which will easily cover the distance from your rear bumper to your truck bed and the connector that fits your truck bed is angled at 90 degrees so it will fit nicely in your Silverado's side rails. The Bargman also comes with a mounting bracket so you will not need to make an extra purchase.
