A sliding type 5th wheel hitch like the B&W Patriot Sliding 5th Wheel hitch # BWRVK3270 is required in a short bed truck but it can still be installed in a long bed so long as you always keep the hitch in the forward locked position.
The Patriot requires industry-standard above-bed base rails for installation. In a 2005 GMC Sierra 1500 you can have the easiest installation using a custom kit that needs less drilling, such as the Curt # C16418-204 which is shown in the linked install video. Or if you want a lower cost kit and don't mind longer installation time you could instead use the Reese universal rail kit # RP30035 which requires more drilling.
If you need an in-bed 7-way wiring kit for a 5th wheel you can use Bargman kit # 50-97-410.
