The reason that it is important to note the bolt pattern (along with the bearing sizes) is exactly that; to make sure that your current wheels fit properly on the Disc Brake Kit # T4843300.
You are correct that a 5 on 4-1/2" bolt pattern is actually the better route to go. It is more common and will be much easier to replace than a 5 on 4-1/4" bolt pattern wheel. As long as your inner bearing is # L68149, your outer bearing is # L44649, and your grease seal has an inner diameter of 1.719" this will work well for your application.
If you let me know what size tires you currently have I would be happy to make a recommendation from the linked page that has 5 on 4-1/2" tire/wheel combos.

It currently has 205-75-14 and they do not seem strong enough for 2500 LB boat, they look like the tire is low. but I'm at recommend tire pressure for tire. I was hoping to go with 225-75-15, and a better brand. Thanks
