The Class III, part # 75876, is about 8 pounds heavier than the Class II, part # 36523. They weigh in at rougly 33 pounds and 25 pounds respectively. They install the same way and are both confirmed to fit your 2018 Subaru Forester.
Between the two I recommend the Class III hitch. Class III hitches have a 2 inch opening which is more common than the 1-1/4 inch Class II so it's easier to find accessories that fit. Also, having a Class III is better because if you do have an accessory to fit the small hitch it's easier to reduce the 2 inch receiver to fit it than it is to increase the Class II to try and fit a larger accessory.
I've linked install videos on both of them for you. As well as an article on hitch Class sizes.
