What is the best hitch and wiring harness for a 2011 Hyndai Sonata Hybrid? Thanks

The most popular hitch, and the one I recommend for your 2011 Hyundai Sonata hybrid, is the Draw-Tite Trailer hitch, # 24965 that you have referenced. This is a Class I trailer hitch with a 200 pound tongue weight capacity and 2,000 pound gross trailer weight capacity. I have included links to the installation instructions.
If you plan on doing some towing, the recommended ball mount is # 3593, and you can use pin and clip # PC2. For a ball use # 19256 or # 19258.
The recommended wiring harness for your vehicle is # C59236. This ModuLite harness offers peace of mind by including circuit protection to safeguard itself and the tow vehicle from harmful electrical shorts and mis-wire situations.
If you plan on carrying any accessories such as a bike rack or cargo carrier, you will need to make sure that the accessory is compatible with a Class I trailer hitch. For Class I approved bike racks, you will be limited to carrying 2 bikes maximum because a Class I hitch cannot support the weight and torque of more than 2 bikes.
