Sounds like a relay or fuse problem. Normally when you hear a click but no operation the relay has gone bad and needs to be replaced.

If you can track down a GM style relay that most vehicles use you can try swapping one with the relay of the compressor to easily rule that out. Most likely that is what it is though.

Or you can test to see if the relay is bad. There will be a 4-pin connector plugged into the manifold. With the key turned forward, unplug the connector and ground pin 4 (grey wire) to the frame. This will complete the circuit to the relay. The relay should click and the compressor should kick on. If the compressor doesn't kick on, then it's a bad relay.

I did the steps you took and unplugged the relay and gave the grey wire a path to ground and the compressor did kick on, what does that mean the problem is?

The relay itself is likely bad and just needs to be replaced. If this doesn't end up fixing the issue just let me know!
