Question:
Please tell me which 2inch hitch would be the best to buy that shows the least when installed on the car. Thank you!

Out of the hitches that fit your 2018 Ford Escape the one that shows the least is the Draw-Tite, part # 75782, although not by a lot. It's designed so that the cross tube is tucked behind the bumper and then the receiver opening is all you see. The opening then sits about 1-3/4 inches recessed from the rear bumper. The other Draw-Tite hitch, part # 75758, shows the complete cross tube so it's the most visible.
However, the Curt, part # C13186, also hides the cross tube but the receiver tube is about 1 inch closer to the edge of the bumper compared to the # 75782.
Keep in mind these measurements are with the hitch installed on a 2017 model so they could be slightly different. The main takeaway is that you're not going to have much difference between the Curt and Draw-Tite hitches that have the hidden cross tube. Between the two of them, I recommend the Draw-Tite, # 75782, because it's slightly less visible.
I've linked videos of all 3 hitches being installed for you.
