Does adding a Prodigy brake switch and the # ETBC7 harness to a 2017 Escape void any warranty to your knowledge?

Vehicle warranty coverage is protected under the Federal Magnusson-Moss Warranty Act. The Act states that if something breaks on your vehicle and you take it in for warranty repair, the dealer must honor your warranty unless whatever modifications you have added to your vehicle actually caused the prob­lem in question.

The only interaction between a trailer brake controller and the vehicle in which it is installed is at the battery, where 12V power is accessed as it would be for any electrical accessory, such as an aftermarket stereo component; and at the car's brake light switch, where the controller's input signal is obtained when the brake pedal is pressed. I know of no reported damage to any vehicle from correct installation of a trailer brake controller.

Your vehicle also requires a 4-pole wiring harness along with the # ETBC7. You can use kit # C56320. This part provides the basic lighting signals needed for the 7-way but also isolates the car's wiring from any potential shorts due to damaged trailer wiring, for instance.
