Will Hollywood Racks Sport Rider SE2 Bike Rack Work with a 2-1/2 Inch Hitch with Reducer Sleeve
Question:
Will this work with a Class V hitch with the sleeve adapter to go from 2.5 to 2? Pretty sure the locking pin wont be long enough but will everything else be OK?

Yes, you can use the Hollywood Racks Sport Rider SE2 2-Bike Platform Rack - 2" Hitches - Frame Mount Item # HR1450Z with a 2-1/2 to 2 inch reducer sleeve. Like you said the included locking hitch pin will not be long enough for a 2-1/2 inch hitch but you can use Trailer Hitch Receiver Lock - Extra Long - Flush Design for 2-1/2" Trailer Hitches Item # e98881 in its place. This lock has a usable span of 3-5/8 inches.
