Would this be able to tow for instance a stand up jet ski or dirt bike?

The Curt trailer hitch part # C11420 has a 2,000 lb trailer towing capacity which would easily be enough capacity for a stand up jet ski or dirt bike since those vehicles and the trailer associated with them are pretty small and lightweight. I attached an install video for this for you to check out as well.
You would want to check the owners manual of the vehicle to be sure it has the capacity for the trailer as well. The overall towing capacity for a vehicle is that of the lowest rated component.
For trailer wiring you then would want the part # C56309.
For a ball mount the recommended one is the part # C45520. For a 2 inch ball you would want the part # C40018 or for a 1-7/8 inch ball part # C40001.
