To get your 2000 Honda Odyssey ready to tow a trailer you will need a trailer hitch receiver, ball mount, hitch ball, and trailer wiring.
For a hitch receiver I recommend going with the Draw-Tite Max-Frame Trailer Hitch Receiver # 75270 which is a Class III receiver with a 2 inch receiver opening. It has a Tongue Weight (TW) rating of 675 lbs and a Gross Towing Weight (GTW) rating of 4,500 lbs. When using a Weight distribution (WD) hitch the GTW is raised to 5,000 lbs.
A great option for a ball mount and hitch ball is to go with the etrailer.com 2-3/4" Rise or 4" Drop Ball Mount Kit # EBMK4 which includes a ball mount with the stated rise and drop as well as a Convert-A-Ball Hitch Ball that can be changed from a 1-7/8 inch diameter to a 2 inch diameter. It also include a hitch pin with a clip and a storage back. You will want to look at the attached article about finding the correct ball mount to ensure that this ball mount has the correct Rise or Drop for your application.
Last of all you will need wiring. I recommend the Tekonsha T-One # 118336 which installs on the inside of your back hatch area (see attached video). You can add a mounting bracket # 18144 if you want to store the connector on the outside and for a No-Drill option you can install the Short # 18140 or Long # C57202 bracket.
I have included some installation videos for you to check out.
