How much current does the A10-2618VP draw at 12 volts? Do you know the sound db level?

I spoke with my contact at Valterra regarding the FridgeCool Exhaust Fan # A10-2618VP referenced in your question. The fan is going to draw 49.8 mA at 12 volts.

They do not have a specific decibel level listed for the sound ouput when running, but my contact did state that the noise level is quite low. Basically, you will likely be able to hear it, but it is not going to be anything that overpowers other surrounding noises like a speaking voice or TV. The fan itself measures 4-1/4 inches in diameter and 3 inches tall.
