Both the Draw-Tite Max-Frame # 75776 and the Curt # C13153 trailer hitch receivers we have for the 2016 Hyundai Santa Fe SE allow the hitch cover to be reinstalled. See the videos of both that I've linked for you.
If you're going to be towing with your Santa Fe the trailer wiring harness that's confirmed to fit is the Curt # C56184. This will provide a 4-way trailer connector that installs by plugging directly into the vehicle's wiring in the rear cargo area. You'll need to remove a rear panel and the side panels to access the connection point. I've attached an install video of the wiring for you as well.
For an adjustable ball mount I suggest the B&W Tow & Stow # BWTS10035B. This will provide either 3 inches of drop or 3-1/2 inches of rise. It also has the feature to flip under the hitch receiver out of the way when not in use. If you prefer a different ball mount I've linked our selection as well as an article to help you determine the correct rise or drop you'll need.
Finally, for a hitch pin and clip you can use # PC3 or if you prefer a locking pin for more security # BX8858.
