On your 2015 Ford Escape, I'd suggest the Curt Class III Receiver Hitch, # C13186. This trailer hitch has better ground clearance and more of a hidden, streamlined look. It has a tongue weight of 350 lbs and 3500 lbs towing. I've attached a video for you that will give you a preview on how this trailer hitch will look on your vehicle. From the manual for your vehicle, it looks like your vehicle can tow up to 2,000 lbs, but I'd also suggest checking your manual for any further specifics.
For your wiring needs, I'd recommend the T-One Vehicle Wiring Harness, # 118566, with 4- Pole Flat Trailer Connection. This is a specific model fit wiring harness for your 2015 Ford Escape, so this is a quick and easy install.
You will also need a ball mount to fit your trailer hitch. I'd go with the Solid-Tow Adjustable Ball Mount, # DTSTBM6407. The ability to adjust the ball mount and multiple ball sizes allows you to haul various trailers and loads level without needing other mounts. It is a great option to cover your bases without needing multiple ball mounts and ball sizes. The billit aluminum construction is lighter without compromising strength. It also has an anti-rattle system that is really nice.
