During the installation, you'd need to temporarily remove the spare tire in order to gain better access to the hitch attachment points. Curt doesn't mention any spare tire clearance issues in the installation instructions, and my Curt representative tells me that if there is a small amount of interference, it wasn't considered significant enough to mention in the instructions.
I've provided a photo showing an underside view of the rear of the vehicle showing how the hitch would sit in reference to the spare tire. As you can see, the only portion of the hitch that could possibly interfere with deploying the spare tire is a very small portion of the rear of the receiver tube. While lowering the tire, you'd simply need to push the tire toward the front of the vehicle by a few inches until it clears the rear of the receiver tube. When you raise the tire, you'd simply reverse the procedure.
If you're planning on using the hitch for towing purposes, you might need the following parts to complete your towing system:
Trailer Wiring Harness, part # 118628
Ball Mount, part # D-4
Hitch Pin and Clip, # PC3
1-7/8 inch trailer ball, part # 19260 or 2 inch ball, part # 63845
