Will the #CAM55301 work properly if you use a 30amp to 15amp adapter?

It depends on where you are using the adapter. The Camco RV Power Defender Voltage Monitor # CAM55301 has to plug into a 30 amp service outlet so it can properly monitor the input voltage. The use of an adapter between the 30 amp panel and the monitor could provide inaccurate readings. If the input coming in is accurately monitored and then you adapted it on the outgoing side to the RV then that would be fine.
