I have a video of the Draw-Tite Class III Hitch, # 75338 being installed on a 2007 Jeep Grand Cherokee.
The video shows it being installed on a Jeep without a tow hook, so if your Jeep has a tow hook it would have to be permanently removed which adds 20 to 90 minutes to the installation time.
I also have a video of the Tow Ready T-One Wiring Harness, # 118425, being installed on a 2007 Jeep Laredo. Even though the vehicle is different, the procedure will be very similar and you can use this video as a guideline.
