will this mirror fit my vehicle and will it interfere with factory mirror operation?

As long as there is a gap between the mirror housing and the mirror itself, the Cipa # CM11980 will fit the factory mirror on your 2015 Jeep Grand Cherokee. It should not interfere with the operation of the mirror.
You might consider the K-Source # KS3891 universal Towing Mirror. The mirror features ratcheting straps for a tight, nearly vibration free fit that won't inhibit minor mirror adjustments.
