The first thing I would do in your situation is take the truck and trailer to your RV dealer and have them check out your setup. Typically 5th wheel trailers are set up to tow a bit pin high to allow for more weight transfer to the rear most axle or axles on the trailer.

From what you describe, it sounds like you have a ground problem somewhere in the trailer wiring or on the trailer wiring harness installed on the vehicle. Ground problems will make the trailer lamps do all sorts of wacky things. With the running lights and the brakes on, activating the turn signals will draw maximum amperage through the trailer wiring system. When you hooked up to the GM trucks, did you notice if the truck said trailer connected?
The towing computer on the newer GMC trucks is kind of finicky and if it did not recognize the trailer, or the trailer was not setup in the system it will not send power to the trailer brakes.
