We have two different style of Roadmaster base plate kits that fit your 2015 Jeep Cherokee Trailhawk. The EZ5 part # RM-521446-5 which does not require the use of the included crossbar of a tow bar, or the EZ4 part # RM-521446-4 which does.
If it were me I would go with the EZ5 as it's a simpler connection that's easier to make. Both work great with the Roadmaster Sterling part # RM-576 which is a very nice tow bar that you'll really like. It comes with safety cables too.

Curt has a 3 ball adjustable ball mount that has a 1 7/8", 2" and 2 5/16" ball, the Curt Multi-Ball Adjustable Ball Mount # D900. Normally tire speed ratings are listed right after the tire size as a letter. For example the letter M represents and 81 mph speed rating. If you can't find a speed rating after the tire size the safe assumption will be that the tire is limited to 65 mph which used to be the standard speed for trailer tires.
