When we installed the Curt Class III hitch, part # C13194 on a Lincoln MKC, we found that the inside top edge of the receiver sat 12-1/2 inches above the ground. The the bottom edge of your boat trailer sits at 16 inches with the trailer level, you'll want to use a ball mount with a rise to raise the trailer ball by about 4 inches. That way, once the trailer is hitches up, the rear of the vehicle will squat a bit which will place the trailer very close to level.
