The Swagman e-spec bike rack you'd looked at, part # S94FR would be an outstanding choice for carrying 2 e-bikes weighing up to 70 lbs. You can lighten your bikes by 10 or so lbs each by removing the battery packs. The rack can accommodate bikes with tires up to 3 inches in width.
Before using the rack on the back of your fifth wheel, you'll want to defeat the folding feature by removing the folding pin and installing the supplied bolt, washers, and nut.
