The drop spindle model you mentioned, part # A35RD545E would be used over the straight spindle model, part # A35RS545E if you wanted a lower deck height on your car trailer. Since you are most likely already using ramps, I cannot see how you would benefit from further lowering the trailer deck height. The straight spindle model would place your spindle center about 4 inches below the mounting surface of the unloaded trailer. The EZ Haul Car Tow Dolly with hydraulic brakes looks like a pretty straight-forward tow dolly that has entry-level quality that get's the job done. We don't carry this tow dolly so I can't speak to longevity but for what it is it seems to be a decent option.

The Curt # C11576 hitch that is designed for your 2021 Toyota Avalon do have decent ground clearance. I do have to mention that the measurements are from installs we did with this hitch on a Toyota Camry, so they may be a little different from where they sit on your Avalon.
With that being said, the Curt # C11576 will measure 11" from the ground to the inside top of the receiver opening. If you are looking for ground clearance, the Curt # C11576 will be your hitch.
