With this hitch installed at the full 72inch width on a fifth wheel. Will it support pulling an ATV trailer with a GVW of 2400 lbs

The Curt RV Hitch # 13703 has a maximum weight capacity of 3,500 pounds. Regardless of how wide the trailer frame it is on is.

Yes, if you install the Stromberg Carlson trailer hitch #SC45MR by welding it you'd have a 3,500 lb towing capacity which be more than enough to tow a 3,000 lb trailer.
