I plan to purchase the complete towing package hidden hitch class III hitch, etc. and a Derale series 8000 transmission cooler for my 2005 Honda Odyssey. What power steering cooler would be advisable to include for this vehicle? Thank you.

The choice of power steering cooler for your 2005 Honda Odyssey will depend on the amount of room you will have to mount the heat exchanger on your vehicle. The power steering cooler will be installed inline with the power steering pump and the heat exchanger will need to be located in a position where it can get airflow to help cool the fluid.
Since you are installing a transmission cooler also, you will want to make sure you will have room for both the transmission cooler heat exchanger and the power steering cooler heat exchanger.
For your 2005 Honda Odyssey, I would recommend either the Derale 2-Pass Power Steering Cooler, # D13200, which allows the fluid to pass through the heat exchanger two times to cool down the fluid.
The heat exchanger has a dimension of 12-5/8 inches wide x 2-1/2 inches tall x 3/4 inch deep.
Also, the Derale 4-Pass Power Steering Cooler, # D13212, is a good choice if you have the room for the taller heat exchanger. It lets the fluid flow through the heat exchanger four times, which cools down the fluid even better then the 2-Pass cooler, but the heat exchanger is larger. It measures 8-1/8 inches x 5 inches tall x 3/4 inch deep.
So if you have room for the 4-Pass cooler, that would be the first choice.
