Three kayaks would be a tight fit on the 37 inch bars on your 2010 Volvo XC60 but I think you can do it. But you would just use the Thule Stacker # TH830 since it handles up to 4 kayaks. The kayaks fit on either side of the bars so there isn't a way that it could damage the kayaks. And the kayaks are not going to weigh enough for the crossbars to damage the kayaks.

We haven't had the opportunity to install the Draw-Tite 75916 Class III hitch on a Volvo S60, but when we installed it on a V60 which has about the same ride height at the rear, we found the receiver height to be right at 11-1/2 inches, which means you'd want a ball mount with around a 5-1/2 inch rise.
