Your assumption about the Titan versus the Atwood coupler is correct. When the tow vehicle comes to a stop, the front of the coupler portion will swivel downward which compresses the actuator. The Titan simply slides directly rearward, with no pivot involved. Although either coupler would serve you well, I prefer the simpler Titan design.

If you are concerned with clearance between the bike rack and vehicle, the Hollywood Racks Trail Rider part # HR200Z would be the one you want to look at. This rack provides at least 11" from the center of the hitch pin hole to the closest edge of wheel hoop.

If someone cut the lock on The Club Tire Claw XL Wheel Lock with Lug Nut Protector Plate # WI491-491LNP then it would be easy to open as you can see in the attached review video. This would is the same for the etrailer Trailer Wheel Lock # 288-02020 that you referenced.
The design of The Club Tire Claw XL makes it harder to cut the lock without damaging the tire plus it comes with that plate that covers up the lug nuts and gives you more protection so that's my recommendation.

The hitch opening on both of these hitches will be in almost the exact same location, one would not give you substantially more ground clearance over the other.
