Hello Phillip,
Yes, you can add a trailer hitch and wiring to your 2021 Jeep Grand Cherokee that is already set up for flat towing. The procedure will be exactly the same installing a hitch, it's just the wiring that might be a bit different. If your Grand Cherokee has a flat tow wiring harness that plugs into your Jeep's lights, the trailer wiring harness will tee in. If your flat tow harness splices in, then the installation of the trailer wiring harness won't be any different at all.
For a hitch, so long as your Grand Cherokee has the removable fascia panel in the bumper, the right hitch that fits all models is the Draw-Tite Max-Frame Trailer Hitch Receiver # DT38MR.
If you do not have the removable fascia panel you'll need a different hitch. The hitch that fits all models except the EcoDiesel and Trackhawk is the Draw-Tite Max-Frame Trailer Hitch Receiver # 75699; OR the hitch that fits all models except the SRT and Trackhawk is the Curt Trailer Hitch Receiver # C13182.
Then to add a 4-way vehicle wiring harness use the Curt T-Connector Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # C62VR.
