I can certainly point you in the right direction. Unfortunately they do not list the coupler height of your trailer online. The hitch on your 2019 GMC Canyon should be right at 19" provided everything is stock. Most trailers have a coupler height around 17", so a 2" drop ball mount like the # 80232 should get you pretty close to level. The best way is to go to the trailer, and with the trailer sitting level, measure from the center of the coupler to the ground. While we do want to be perfectly level if possible, as long as you are within 3" of level, it will still be safe to tow.
You could always take the easy way out and get an adjustable ball mount like the # FHG79ZR. This is adjustable to 6" of drop or 8" of rise and can tow 12,000 lbs. So this would work for virtually any vehicle/trailer combination.
