Depends on the trailer. If the 26 foot trailer you plan on towing weighs less than 3,000 lbs then a hitch with that capacity would be adequate.
You should note that if you are talking about traditional trailer towing you would need a hitch for the rear of your 2007 Jeep Grand Cherokee, the Curt Hitch part # C31047 that you referenced is a front hitch that installs on the front of your vehicle and would not be what you would need.
You would want something like the Draw-Tite part # 75338. This installs at the rear of your vehicle and has a 5,000 lb trailer capacity that would hopefully work well for you depending on how much your trailer weighs. You should consult your owners manual to determine what Jeep designates as the towing capacity and go by the lowest rated component in your setup to determine overall capacity.
