That's not what I would consider the most ideal towing setup but if the area you plan to tow on is mostly flat and you have verified your trailer doesn't hit the corners of your flat bed when turning you'd be good.
Gooseneck towing with a flat bed can be challenging since the beds are longer which makes them closer to the trailer. If you can get away with using the non-offset version of your adapter part # CAB-C5G that would give you a lot more flexibility. This would reduce the distance from your flat bed to your trailer by 7-1/2 inches so you'd need to verify that as well.
