Question:
whats the difference between Curt C55341 and the T-One 118341 wiring harness?

There is not much difference at all between Tow Ready harness # 118341 and Curt harness # C55341. Both install the same way and work the same way. The Curt harness is rated a little higher at 3 amp per circuit for stop/turn lights and 7.5 amps for tail lights. The Tow ready harness is rated for 2.1 and 4 amps.
The way the internal parts are arranged is a little different as well. The Curt converter has all the bips and bops attached to one side of the circuit board. The Tow Ready harness is more traditional with some capacitors and other components on one side and some on the other side.
Either one will fit and work for you but if you are concerned about power draw the Curt is rated higher.
