Both an air bag system and a Timbren system are meant to enhance the performance of your existing vehicle suspension. Either system is meant to be used in conjunction with other components of your suspension system, but are not intended to be a stand alone replacement of your existing suspension.
A Timbren system works to replace your existing jounce stop on either the front or rear suspension. Timbren systems work to level the load on your vehicle, increase stability and handling, decrease vehilce sag. This systems prevent bottoming out and over extending your existing leaf springs.
A Timbren system when used on the front or rear suspension only activates after the spring itself has been compressed, and the springs get stronger with additional compression.
An airbag system provides greater adjustability, and can have greater effects on the ride quality of your Escalade. Airbags are also used in conjunction with other components of your vehicle suspension and require either an external air pressure source, or an on-board air compressor.
One key factor that helps to determine which suspension style is best for your is to consider how the enhancement will be used. A Timbren System usually benefits the daily towing crowd the best, typically when a consistently heavy load is being routinely towed. An airbag system helps with this too, but is typically recommended for occasional towing, or people that tow a variety of different weights with their vehicle.
I have provided a link to the vehicle suspension kits that are confirmed as a fit for your 2000 Cadillac Escalade for your reference.
The Timbren Kit # TGMFC1588H that you referenced is intended to be used as on the front axle suspension of your Escalade, and is a specific fit for the two wheel drive models. This would work best if you were routinely using a front mounted plow, or a load bearing front mounted hitch. This is the only front axle suspension system for a 2wd model that is confirmed for your vehicle.
I have included two informative articles about both Timbren and airbag suspension enhancements for your reference.
