The trailer hitch that I recommend for your 2011 Ford Escape without a factory hitch is the Curt Trailer Hitch Receiver # 13650. This hitch is made in the USA, has a bolt-on, no-drill installation and will provide you with a class III, 2" hitch receiver. The 2" receiver is the most common size used for hitch mounted accessories such as bike racks, cargo carriers and ball mounts.
For a wiring harness you can use the T-One Vehicle Wiring Harness # 118551 which is confirmed to fit your 2011 Ford Escape without a factory tow package.
To round out a tow package for your Escape, you can add the etrailer Ball Mount Kit # 989900.
