I recommend the Curt Trailer Hitch Receiver # C14082 for your 1985 Chevrolet C10 pickup with the 8' bed. This is a class IV receiver and will require you to drill 6 mounting holes in your 34" wide frame rails. The maximum trailer weight capacity of the receiver is 12,000lbs and 1,200lbs of tongue weight with a weight distribution hitch. Without a weight distribution hitch, capacity decreases to 10,000lbs and 1,000lbs of tongue weight. Be sure to not exceed any towing ratings give by Chevrolet for your C10.
The Hopkins Plug-In Simple Vehicle Wiring Harness # HM41115 will give you a 4-way flat connector that is used with most smaller trailers and boat trailers. If you are going to haul larger trailers with electric brakes you will also need the Universal Installation Kit for Trailer Brake Controller # ETBC7. This will take the input from the 4-way above and allow you to install a Tekonsha Prodigy P3 Trailer Brake Controller # 90195 inside your C10.
