Because of its longer receiver tube which helps hitch mounted accessories like bike racks clear the spare tire, I'd recommend the Curt # C13392 Class III hitch, which installs as shown in the linked video.
For a trailer wiring harness, I'd recommend the Tekonsha # 118786, I'll also link to an install video for that.
You'll also need a ball mount and trailer ball. If your Jeep is at stock ride height, the # C45010 ball mount with a pin and clip # PC3 would work great for you. For a 1-7/8 inch trailer ball, use # 19260 or # 63845 for a 2 inch ball.
