Question:
what is the length of the hitch from the bolts to the end? Trying to determine what extension will be needed to clear the spare tire.

The best way to determine this distance is by measuring the distance from the hitch pin hole to the outer edge of the spare tire; we've actually taken this measurement on the Curt # C13524 and determined that when installed on your 2005 Toyota RAV4 you're going to have 10" from the hitch pin hole on the hitch to the edge of the spare tire. This means you'll need any accessory you use to have at least 10" from the hitch pin hole on the shank of the carrier or bike rack to the closest edge of the carrier or bike trays.
With all of that said, I do recommend avoiding using any extensions since they will reduce the tongue weight capacity of the hitch by 50%; it looks like your 2005 RAV4 only has a tongue weight capacity of 150-lbs, so that would mean you've only got the ability to carry 75-lbs including the carrier and cargo.
If you're planning on carrying bikes, a really nice rack that has 11" from the hitch pin hole to the closest part of the rack when folded down is the RockyMounts MonoRail Bike Rack for 2 Bikes - 2" Hitches - Wheel Mount # RKY10004, so it will clear the spare tire for you and you wouldn't reduce the tongue weight capacity at all.
If there's something else you need to put on the hitch just let me know and I can locate something that would work for your 2005 RAV4.
